The edit style menu has three main sections, which you can navigate between by tapping on the associated word at the top of the menu:
Typeface: in the typeface section you can select your font and the style of that font.
Design: explained in the following section, the design submenu allows you to modify the tracking, kerning, baseline, opacity, etc. of your highlighted text.
Attributes: the Attributes submenu allows you to change the alignment of your text within the box, underline, it, outline it, etc.
The Typeface panel contains your fonts list on the left, and the different display options for each font on the right.
In your fonts list on the left, scroll up and down to see your available fonts, then tap on one to select and apply it to any text you've currently highlighted on this text layer.
On the list on the right in the typeface menu, you can see different stylings for the currently-selected font.
Stylings vary based on the font you select, and the available glyphs for that font. For example, if you select UltraLight, the font will displayed as thinner and less-start compared to Regular.

The middle buttons toggle two simple text effects. Underline adds a stroke underneath your text. Outline changes a solid font to an outlined version. You can use both effects at once.
